Rinse the kodo millet under cold water and soak it for 30 minutes. Drain the water and set aside.

Heat oil or ghee in a pan over medium heat. Add cumin seeds and mustard seeds. Let them splutter.

Add chopped onions and sauté until they become golden brown.

Add ginger-garlic paste and green chili. Sauté for a minute until the raw smell disappears.

Add chopped tomatoes and cook until they become soft.

Add turmeric powder, garam masala, red chili powder, and salt. Mix well.

Add mixed vegetables and cook for a few minutes until they are slightly tender.

Add the soaked and drained kodo millet to the pan. Mix well to coat the millet with the masala.

Pour 2 cups of water into the pan. Bring it to a boil, then reduce the heat to low, cover the pan with a lid, and let it simmer for about 15-20 minutes or until the millet is cooked and the water is absorbed.

Once the millet is cooked, fluff it with a fork. Garnish with fresh coriander leaves.
