Here’s a simple recipe for Rava Idli

Ingredients:

1.1 cup fine semolina (rava/suji)
2.1 cup yogurt (curd)
3.1/2 cup water (adjust as needed)
4.1/2 cup grated carrot (optional)
5.1/2 cup chopped cilantro (coriander leaves)
6.1/2 cup grated coconut (optional)
7.1 tsp mustard seeds
8.1 tsp urad dal (split black gram)
9.1 tsp chana dal (split chickpeas)
10.1/2 inch ginger, grated
11.1-2 green chilies, finely chopped
12.A pinch of asafoetida (hing)
13.1/2 tsp baking soda
14.Salt to taste
15.2 tbsp oil (for tempering)

For garnish:

1.Chopped cilantro

Instructions:

Prepare the Batter:

1.In a pan, heat oil and add mustard seeds. Allow them to splutter.
2.Add urad dal, chana dal, and sauté until they turn golden brown.
3.Add grated ginger, chopped green chilies, and asafoetida. Sauté for a minute.
4.Add semolina (rava) and roast it on low heat until it turns light golden and you get a nice aroma. Make sure not to burn it.
5.Allow the mixture to cool down to room temperature.

Mix Yogurt and Water:

1.In a bowl, whisk yogurt and water together until smooth.
2.Add the roasted semolina mixture to the yogurt-water mixture and mix well. Ensure there are no lumps.
3.Let the batter rest for 20-30 minutes to allow the semolina to absorb the liquid.

Add Vegetables:

1.After resting, the batter will thicken. Adjust the consistency by adding more water if needed.
2.Add grated carrot, chopped cilantro, grated coconut (if using), and salt. Mix well.

Add Baking Soda:

1.Just before steaming, add baking soda to the batter and mix well. The batter will become frothy.

Steam the Idlis:

1.Grease the idli molds with oil.
2.Pour the batter into the molds and steam in a preheated steamer for about 15-20 minutes or until a toothpick inserted comes out clean.
3.Garnish with chopped cilantro.

Serve:

1.Let the idlis cool for a few minutes before removing them from the molds.
2.Serve Rava Idli with coconut chutney or any chutney of your choice.
